What's a good starting secondary for mesmers?

IMO Mesmers are best left with one profession, of course you have to pick one but I'm saying it dosen't matter much. Either go for /N or /E just incase.

Depends what campaign you're playing but Ele is useful as you can get Glyph of Lesser Energy which helps out with any high energy spells and it saves having to spread your attributes at a low level.

As usual, I would recommend /Mo. It's best imho, to start out almost any class by concentrating on that class's skill set until you get familiar with the the skills and how they interact. The Monk secondary is essentially the same as no secondary - the only difference is, you can bring a re-usable rez skill such as Rebirth and perhaps a self-heal - it's not for the purpose of being a monk/healer.
By the time you have enough skills and have enough experience, you'll be at the point where you can change your secondary, if you want.

id say /N and invest some points in curses as there r some pretty good hexes in there like Insidious parasite for a semi-heal as mesmers don't have strong self heals

Depends on the campaign. For Nightfall I'd say necro as necrosis is great on a mesmer (especially with Lyssa's Aura as your elite, but that'll come later). For Prophecies I'd say monk for the reusable res. For Factions I'd go ele.
